Alan had always wanted to run a farm, and in 1998 Alan and Angela took over the tenancy of Wobbly Bottom Farm, a small farm situated a mile outside the historic market town of Hitchin in Hertfordshire, and initially ran a herd of 300 goats for milk production.

The goats were milked twice a day and produced about 500 litres which was sold to a dairy for cheese making, but in 2003 the dairy cancelled all local contracts and started to import cheaper goat's milk from abroad. This meant that Alan and Angela suddenly had to either source a new buyer (not forthcoming) or change direction, and they decided to go into cheese making ("mad or what").

The transition has been long and hard and until the end of 2007 just about all income was derived from 40 odd farmer's markers a month where our soft goat cheese and Camembert styled goat cheese have been a very well received.

What makes our artisan cheese so unique is that the person who milks the goats is the person who makes the cheese. Unlike some larger dairies that make cheese in larger batches, our milk comes fresh from our goats every day, and so we hand make our cheese in small batches almost every day. All our Cheeses normally despatch within 2 days and travel by overnight courier.
We despatch on Monday to Thursday, for delivery the next day.
Our cheeses are carefully packaged to maintain optimum quality. As needed, your order will be packed with ice packs for shipment. Please refrigerate immediately.
Weights: While cutting and sizing cheese is an art, the weights given are the minimum weight you will receive.
As our products are perishable please ensure your delivery address is correct that there is someone present to accept the goods as we cannot be held liable for the condition of the goods in the event of non-delivery.

We want you to be 100% happy with your order. We will replace or refund in the event the product arrives damaged. You must contact us within 7 days of delivery. As cheese is perishable, we cannot take back fresh cuts of cheese because you do not like them. But we promise we will do what we can to satisfy you! We run an open barn policy so the goats are free to choose to stay undercover or graze on the 39 acres of grass fields, and we now have a mixed dairy goat herd of British Saanens, British Alpines, British Toggenburgs and Anglo Nubians all selected for their fine quality milk.

THE CHEESE TASTES SO GOOD, BECAUSE THE GOATS EAT SO WELL!

Because we control exactly what the goats eat, we can make sure we consistently get the best quality milk, which in turn makes the very best quality cheese. We take such great care because if we change their diet you can taste the difference in the milk almost immediately. A lot of the difference in cheeses comes down to their diet, and here in the UK the grass is very sweet which creates cheese that is not as "goaty" as some European gat's cheese.

We control all aspects of production from what the goats eat to the finished product that we generally sell at farmers markets and food festivals. We mix our own goat feed on the farm and at present about 65% of what the goats eat is produced at Wobbly Bottom. We have just planted 18 acres of Alfalfa to be added to the feed ration and once this is harvested we will be producing 85% of the feed. This ensures that we know that the quality of the feed and hence the milk and cheese is at its highest.
