A super-soft centre of sea-salted caramel made using unrefined sugar, blended with dark and milk chocolate and dusted with cacao powder.
This oozing marvel is bite size and full of molasses and coffee notes with the richness of the chocolate adding to the effect.
Classically the salted caramel is done using cream and white refined sugar. I've always been an advocate for using unrefined sugar as it has so much more complexity, the refining process removes all that character. Most sugar companies refine the sugar, at extreme environmental cost, then spray the white sugar with molasses to give the appearance of unrefined!
